These Kiwi Coconut Vodka Pops are a cool treat for adults that are great for hot summer days. This frozen treat is delicious because it has sweet kiwi, creamy coconut milk, and a hint of vodka.
Ingredients: 4 ripe kiwis, peeled and diced. 1 can 13.5 oz coconut milk. 1/4 cup vodka. 1/4 cup honey or agave syrup. 1 tablespoon lime juice.
Instructions: In a blender, combine diced kiwis, coconut milk, vodka, honey or agave syrup, and lime juice. Blend until smooth and well combined. Pour mixture into popsicle molds. Insert popsicle sticks into molds. Freeze for at least 4 hours or until completely set. To unmold, run the popsicle molds under warm water for a few seconds to loosen the popsicles.
