Gimjang or 김장 (sometimes written kimjang) is the traditional method of making and preserving kimchi, the spicy Korean meal made from fermented vegetables. Kimchi is a staple of Korean cuisine and can be consumed as a side dish with practically any meal. Seoul has established the only kimchi museum in the world, where visitors and locals can try several varieties of the fermented food and see how the traditional gimjang method works.
