This is one of my favorite Khmer dishes. I actually made this for the first time ever and without a recipe - just taste and go. Making food is all about experimenting! =) AND my mom loved it!
I really love kroeung, which is a blend of herbs like lemongrass, kaffir lime leaves, garlic, etc. It really spices up a stir fry! Traditionally, you'd use holy basil but all I had was Thai basil, which works. The chopped peanuts add a sweet note and some crunch. Also, I used a different kind of chili peppers instead of bell peppers/ jalapeno. My mom's friend plants these peppers that are really crunchy and not spicy at all. I have no idea what they are called! I think they might be Italian sweet peppers. They're long and kinda sweet.
