HOW TO MAKE NOODLE(LORT CHA)
I don’t have an exact recipe written because it’s such a simple and easy dish that you just toss together to your liking. Lol.
You’ll need lort noodles, your choice of protein, minced garlic, dark soy sauce, sweet soy sauce, regular soy sauce, chives/ scallions (cut into 2in length), bean sprout, eggs, and sweet chili sauce.
Pour enough dark soy sauce to lightly coat your noodles so that they have a light brown color. Don’t drown it. Set aside.
Heat your wok w/ oil and sauté the garlic until golden and toss in your protein until cooked. Add the noodles plus seasoning. (You may need a little more oil so the noodles won't stick.) Seasoning is up to your taste. Reg soy for saltiness and sweet soy for a bit of sweetness. You can also add black pepper. When everything is cooked through, toss in bean sprouts and chives or scallions. Turn off heat. Fry a sunny side egg in a clean pan. Plate some lort cha w/ the fried egg on top and serve w/ sweet chili sauce and/or sriracha.

This was very time consuming making the noodles by hand, sprouting the mung bean sprouts, and making the youtiao (Chinese breadsticks). But so worth it :)
