Grilled whole pork loin is a cut of meat that is easy to overcook, making it dry and less flavorful. However, by following these simple instructions, you can create a grilled pork loin that will be flavorful, juicy, and cooked to the perfect internal temperature.
Natural gas will give pork loin, or any other meat, a flavor that is different from that of charcoal or natural wood. For this recipe, charcoal or natural wood is preferred. The first step is to set up your La Caja China grill for cooking. Heat your charcoal or wood, and then concentrate most of the charcoal on one side of the grill. This will give you a hot zone and a cool zone for cooking.
While your charcoal is beginning to burn, rub the meat with olive oil, and sprinkle it with seasonings. This recipe calls for paprika, coriander, fennel seeds, a dash of cinnamon, and salt and black pepper to taste. Then, place the grate on top of the burning coals. Close the lid of the grill for approximately five minutes, or until the grate becomes hot.
Next, remove the cover from the grill and set it aside. Place the pork loin on the hot side of the grill, for about two minutes on each side. This should leave it brown and seared on both sides. Once the meat has been seared, move it to the cooler side of the grill. The thickest side of the loin should be closest to the charcoal or wood.
Then, place the cover on the grill with the vents open halfway. Allow the meat to continue to cook for about 15 minutes. Then, remove the cover and reposition the loin so that the side closest is now farther away from the coals. After about 15 to 30 minutes, the pork loin should read about 140 degrees on a thermometer. Once this occurs, place the pork loin on a cutting board. Let it set there for 15 minutes while you wait for the internal temperature to raise to 150 degrees. It will then be ready to be sliced and served to you and/or your guests.
