What weapon does your muse prefer?
Artillery. While he can more than hold his own with a rifle, pistol, shotgun, or submachine gun, artillery is the god of war; in WWII and WWI, it's estimated that 50-75% of all casualties were inflicted by artillery fire, surpassing small arms, bombing, and tanks combined.
Who taught my muse how to fight?
Iroh's had many teachers over the years; his beginner level firebending, he learned from his mother, and when he'd progressed far enough, his grandfather passed down more advanced techniques. When these still weren't enough, Iroh sought out his great aunt Azula to teach him expert level firebending, as well as more advanced strategy for personal combat.
He was privately tutored on jian technique by a pupil of Piandao, Master Huang, who studied under the Grand Lotus for years before he retired. A veteran of the Hundred Years War, Master Huang served as the Minister of Guards for years under Fire Lord Zuko, before retiring to teach his grandson sword technique.
Iroh had a series of instructors during his time as a cadet; there were dozens of professors at the Imperial Military Academy, and he had a succession of non coms instructing him during infantry school, ranger school, airborne/air assault school, the special forces qualification course, Imperial Staff College, and finally War College. But none of them taught him as much as fighting side by side with Commander Bumi in every corner of the globe, facing certain death more times than either of them could count on their whole teams' digits put together.
