Any suggestions on very small skins? What could one do with a single squirrel or rabbit, obviously little pouches, anything more interesting?
If you don't mind cutting up the hide, you can use the fur as trim and such around the edges of winter clothing to help keep your body heat in and the cold out. It's beautiful and functional.
If that doesn't float your boat, a little shoulder bag or something similar is also a good option, as you mentioned already. You could also decorate the leather and string the hide out on a willow branch hoop to use as a wall-hanging.
