Savor the rich, chocolate-filled center of this Chocolate Lava Cake, which is warm and oozing. For those who enjoy chocolate, this dessert is the ideal treat!
Ingredients: 1/2 cup 1 stick unsalted butter. 1 cup semisweet chocolate chips. 1 cup powdered sugar. 2 large eggs. 2 egg yolks. 1 teaspoon vanilla extract. 1/4 cup all-purpose flour. Pinch of salt. Cooking spray or butter for greasing ramekins.
Instructions: Preheat your oven to 425F 220C. In a microwave-safe bowl, melt the butter and chocolate chips together in 30-second increments until smooth, stirring between each increment. Stir in the powdered sugar until well combined. In a separate bowl, whisk together the eggs, egg yolks, and vanilla extract. Slowly add the egg mixture to the chocolate mixture, stirring constantly until fully combined. Sift in the flour and add a pinch of salt, then fold it into the batter until no streaks remain. Grease four ramekins with cooking spray or butter, then divide the batter evenly among them. Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes until the edges are set, but the center is still soft. Remove from the oven and let them cool for a minute. Then, carefully run a knife around the edge of each ramekin to loosen the cakes. Invert each ramekin onto a serving plate, and gently tap to release the cakes. They should have a gooey, molten center. Serve immediately with a scoop of vanilla ice cream or a dusting of powdered sugar, if desired.
