Ingredients: 2 cups cooked ham, diced. 1 tablespoon olive oil. 1 onion, chopped. 2 cloves garlic, minced. 2 potatoes, diced. 2 cups corn kernels. 4 cups chicken broth. 1 cup heavy cream. Salt and pepper to taste. Chopped fresh parsley for garnish.
Instructions: Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, saut until softened. Add diced potatoes and corn kernels, cook for 5 minutes. Stir in diced ham and chicken broth, bring to a simmer. Let simmer for 20 minutes until potatoes are tender. Stir in heavy cream, season with salt and pepper to taste.
