Lemon Possets

Makes 4.

Ingredients:

4tbsp lemon curd

Finely grated zest of 1 lemon

2 tbsp lemon juice

Thin lemon sliced, to decorate

300ml double cream

Crisp biscuits, such as langues de chat or cigarettes russes, to serve 

Method:

In a small bowl, mix together the lemon curd and lemon zest and juice. In a separate bowl, whip the double cream with an electric mixer until soft peaks form.

Fold the mixture into the cream until just combined, being careful not to over-mix it.

Spoon the posset into 4 serving glasses. Decorate with thin lemon slices and serve with crisp biscuits.
