the peppermint candy is in a non-canon novelization - in fact most speculation on vulcan intoxication is just that, speculation. the most canon we have is t'pol in enterprise when she gets intoxicated by a black forest gateau, however black forest gateau has liquor in it. also, vulcans have a highly efficient metabolisms, which is why alcohol is said not to have any affect on them, so it's arguable that processed sugar (esp in small amounts) would have any affect either,
See that’s the thing! It’s so hard to know what’s ‘correct’ when most of what we know/think we know is based off of novels and/or prominent fan theories! And it’s well-established in canon that alcohol doesn’t have the same effects on Vulcans (which may or may not affect Spock because he’s half-human, but also novels have established that he is also fully Vulcan in anatomy and biology so LIKE???)
Honestly because it’s all speculation, as you say, it’s probably all ‘correct’ to some degree, but it’s always nice to be as close to the fandom’s estimations/ideas/thoughts/theories as possible. At least I like to be close to it. SO I dunno? I mean, maybe it’s all just a shot in the dark. Hahah!
