Ingredients: 4 boneless, skinless chicken breasts. Salt and black pepper to taste. 2 tablespoons olive oil. 3 cloves garlic, minced. 1 lemon, sliced. 1/4 cup chicken broth. 2 tablespoons fresh lemon juice. 1 tablespoon honey. 1 teaspoon dried thyme. 1 teaspoon paprika. Fresh parsley, chopped for garnish.
Instructions: Season chicken breasts with salt and pepper on both sides. In a large skillet, heat olive oil over medium-high heat. Add minced garlic and cook until fragrant, about 1 minute. Place chicken breasts in the skillet and cook until golden brown on both sides, about 4-5 minutes per side. Add lemon slices to the skillet, arranging them around the chicken. In a small bowl, mix together chicken broth, lemon juice, honey, thyme, and paprika. Pour the mixture over the chicken in the skillet. Reduce heat to medium-low, cover, and let simmer for 8-10 minutes, or until chicken is cooked through and reaches an internal temperature of 165F 75C. Garnish with chopped parsley before serving.
