Ingredients: 1 cup rice. 2 cups shredded cabbage. 1 lemon, zest and juice. 2 tablespoons black pepper. 1/4 cup vegan pecorino cheese, grated. 2 tablespoons olive oil. Salt to taste.
Instructions: Cook rice according to package instructions. In a large skillet, heat olive oil over medium heat. Add shredded cabbage and cook until tender, about 5-7 minutes. Add cooked rice to the skillet with cabbage. Mix in lemon zest, lemon juice, black pepper, and vegan pecorino cheese. Stir well to combine and cook for an additional 2-3 minutes until heated through.
