Ingredients: 1 package tortellini. 2 cups fresh spinach. 1 tablespoon olive oil. 2 cloves garlic, minced. 1 cup heavy cream. 1 lemon, zest and juice. Salt and pepper to taste. Grated Parmesan cheese for serving.
Instructions: Cook the tortellini according to package instructions. Drain and set aside. In a large skillet, heat olive oil over medium heat. Add minced garlic and saut until fragrant. Add fresh spinach to the skillet and cook until wilted. Pour in heavy cream and stir in lemon zest and juice. Bring to a simmer. Season with salt and pepper to taste.
