I'm curious about how to find out more info on a school! Is it proper to ask coaches and professors outright what they're looking for via email? And if they think their school is a pod fit for you?

That would be acceptable, but I definitely recommend emailing the head of the department rather than just any ordinary professor. Heads of departments will be able to provide more info about their specific program than just a random professor in the department! You could also email admissions of the university directly and simply ask for more info on the school and they can probably mail/email you more info about their institution.
