Lentils Excellent source of iron, great for people suffering from anemia reduces constipation due to it’s high fiber content, the release of glucose is slow therefore it does not provoke sudden increase in blood sugar levels. Reduces cholesterol by collecting the cholesterol from other foods , as well as bile acids and eliminates them through the faeces. Recipe Coconut oil Olive oil Canned tomatoes or a cup of tomatoes 1 table spoon of fenugreek seeds 1 table spoon coriander seeds 2 teaspoons of mustard seeds 2 teaspoons of fennels seeds One round onion A piece of ginger 3 cloves of garlic 1 baby pumpkin Boil 1 packet of red lentils I a pot cook as you would cook rice. 1 cup of lentils to 2 cups of water. Once boiled, heat oil in a frying pan add chopped onion, ginger and garlic until soft. Now add the spices and fry. Next add tomatoes and allow sauce to thicken. Once thickened add lentils and stir in. To make it extra creamy add a half a cup to a cup of coconut oil according to your own taste.
