A delicious and satisfying salad with warm goat's cheese, crunchy walnuts, and a tangy honey mustard dressing. Perfect for a light lunch or appetizer.
Ingredients: 150g goat's cheese. 100g mixed salad greens e.g., arugula, spinach, and kale. 1/4 cup walnuts, chopped. 2 tablespoons honey. 2 tablespoons Dijon mustard. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste.
Instructions: Preheat your oven to 180C 350F. Slice the goat's cheese into 1/2-inch thick rounds. In a small bowl, mix together honey, Dijon mustard, olive oil, balsamic vinegar, salt, and pepper to make the dressing. Place the goat's cheese rounds on a baking sheet and drizzle a little olive oil over each round. Bake the goat's cheese in the preheated oven for 5-7 minutes, or until slightly melted and golden brown. While the cheese is baking, divide the mixed salad greens among serving plates. Once the cheese is ready, place one or two rounds on top of each salad. Sprinkle chopped walnuts over the salads. Drizzle the honey mustard dressing over the entire salad. Serve immediately while the goat's cheese is still warm.
