This recipe for Mint Lime Grilled Chicken is great for grilling in the summer. The chicken tastes great when mixed with fresh lime juice and mint. This makes it a great dish for BBQ parties or gatherings outside.
Ingredients: 4 chicken breasts. 1/4 cup fresh lime juice. 2 tablespoons olive oil. 2 cloves garlic, minced. 2 tablespoons fresh mint, chopped. 1 teaspoon salt. 1/2 teaspoon black pepper.
Instructions: In a bowl, combine lime juice, olive oil, garlic, mint, salt, and pepper to make the marinade. Place chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Ensure chicken is evenly coated. Marinate chicken in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor. Preheat grill to medium-high heat. Remove chicken from marinade and discard excess marinade. Grill chicken for 6-8 minutes on each side, or until juices run clear and internal temperature reaches 165F 75C. Remove chicken from grill and let it rest for a few minutes before serving. Garnish with extra mint leaves and lime wedges if desired.
