These lime bars are sweet, sour, and creamy, and they melt in your mouth! A delicious treat for any occasion and great for citrus fans.
Ingredients: 1 cup all-purpose flour. 1/2 cup confectioners' sugar. 1/2 cup unsalted butter, softened. 2 large eggs. 3/4 cup granulated sugar. 1/3 cup fresh lime juice. 1 tablespoon lime zest. 2 tablespoons all-purpose flour. 1/4 teaspoon baking powder. Confectioners' sugar, for dusting.
Instructions: Warm the oven up to 175F 350C. Put 1/2 cup of confectioners' sugar and 1 cup of flour in a small bowl and mix them together. Add the softened butter and mix until the mixture looks like big crumbs. Put it firmly into an 8-inch square baking pan that has been greased. Bake in an oven that is already hot for 20 minutes. Mix the eggs, granulated sugar, lime juice, lime zest, 2 tablespoons of flour, and baking powder together well while the crust is baking. Put the lime mix on top of the hot crust. Put it back in the oven and bake for another 20 to 25 minutes, or until it's set. Let the lime bars cool all the way down on a wire rack in the pan. Sprinkle with confectioners' sugar after it has cooled down and then cut it into squares. Serve and have fun!
