It’s been a while since I made croissants! Or since I posted. I’ve been putting my efforts into focusing on life offline, and a lot of it happens to also be on full time recipe development for the second installation of my salad-life book. A lot has been said about the mental health affects of social media and I believe there’s a lot to it. At the very least for me, it’s about just getting in the necessary work done that matters most. The older I get, the more I value focus in a world overflowing with distractions like a broken piñata at a birthday party. Multitasking simply does not work, and the more I put focus into one thing at a time, like writing a recipe, or playing a game, or having a conversation, or baking something, the more I feel like I’m actually living. That being said, it’s a pleasure to work with a fresh batch of beautiful vegan butter from my friends at @forafoods . I do need to get my dough shaping game down, but this were a special “emergency” bake.
