CHEESE.  No renet, no aging, no special equipment.  

You can literally use a dishtowel or t-shirt rag as the cheesecloth to strain it through.  If you don’t have a thermometer, just barely let the milk come to a boil, then take it off the heat and add the vinegar/lemon juice.

Ingredients: Milk, vinegar or lemon juice, salt to taste.  That’s it.

Turns out similar to Queso Blanco or Paneer.  I have been making variations of this and giving it to friends for two weeks now.
