Does Varric snore, and if so is there something that triggers it?

Yes. Varric has a deviated septum due to a broken nose. His deviated septum would be considered surgical by modern-day standards.

His nose was broken twice in Kirkwall and then again in the collapse of Haven. His nose was broken once by his brother, again on an indiscriminate mission on the way to Haven, as seen in DAI due to tissue reactivity in the opener ( his whole nose is inflamed ), it was then broken again in the fight out of Haven, him smashing his face in battle and using a potion to heal it.

He does not snore overtly loudly, but he does have a septum that causes a whistle, if that is the smallest amount of noise.

So I'm watching EXU Calamity for like the fourth time this year, as you do, and there's this moment in the opening, easy to miss, when Brennan says that Zerxus hears voices in the slowed time calling, "to arms," and "Avalir, rise!" Which may sound familiar, because those are the exact words that one Mr. Lou Wilson will later shout in character as Nydas in the final episode when Zerxus' vision of ruin has been realized. Hot damn.
