Roasted sweet potato and butternut lasagne with fennel and orange salad. Yoooooooooooooo, Fam...Creamy silky sweet potatoes, crunchy cheesey corners where the Mozz and the Goat cheese meet. Really deeply flavored 'ragu' of caramelized onions, pumpkin, garlic, and zucchini. Outstanding! Layers of hella convenient, no bake pasta sheets, brown butter bechemel, ragu, thin slick coins of roasted sweets, cracked pepper and flaky salt married really beautifully. It's a vegetarian main that is Holiday worthy. It was cheap to make, and really effortless, as I made the base one day, roasted the sweets ahead, and just had to make the bechemel before I built it. I had alot of feelings and concepts to cook through and had planned to spend today in the Lab. I made soup, brewed teas, made ganache for tomorrow's baking, made a few flavor bases, and had a cuppa with a Goddess.
