Curried Tuna Egg Salad

Great dinner idea that doesn’t over heat your house on a hot summer day! Served on a bed of mixed greens, it fits in well with my diabetic diet goals, too.
1 - 12 oz. can water pack tuna, drained
1 t. + hot curry
1 c. celery, diced
1/2 c. Mexican sour cream
2 hard boiled eggs, peeled, diced in an egg slicer/guillotine
OR
2 apples, cored, diced with skins on
Mix together thoroughly with boiled egg or apple...serve! How easy could that be?
