It's my first time cooking and eating taro leaves (dahon ng gabi) and it's sO GOOD. I couldn't decide if I wanted to make full on laing or go with a luau stew recipe I saw, so I kind of combined them. Laing is supposed to use a lot of coconut milk And is spicy, both things I can only have in moderation right now. I seasoned the pork with a little bit of chili lime seasoning, and then used mostly broth and a big drizzle of coconut cream to make it more Cori-friendly. I was worried I might cook the leaves wrong, since I know what eating undercooked taro feels like, (and I assume the leaves feel wAY worse from what I've read) but they're fine!
