Luganiga - The Istrian Sausage
The Luganiga (Istrian for sausage) is made out of pigs meat only (70 %) and 30% fat, accompanied with salt, black pepper, white wine, individually added garlic, rosemary and other spices from the region.
They don’t get smoked and drying process lasts for 10 days for fresh sausages ready for the grill. Or up to 25 days depending on the weather for dry cured sausages as we ate them later at the Luganigada festival.
During this longer drying process, the sausages get the more then welcomed white mould which appears on the surface of the skin as seen in the photo above. It actually gives the specific flavor to the sausage.
