A quick and easy quinoa lunch jar filled with a medley of flavors and textures.
Ingredients: 1 cup cooked quinoa. 1/2 cup chickpeas, drained and rinsed. 1/2 cup cucumber, diced. 1/4 cup cherry tomatoes, halved. 2 tablespoons feta cheese, crumbled. 1 tablespoon olive oil. 1 tablespoon lemon juice. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Put cooked quinoa, chickpeas, cucumber, cherry tomatoes, and feta cheese in a jar. Mix olive oil, lemon juice, salt, and pepper in a small bowl with a whisk. Add the dressing to the quinoa in the jar and mix it all together. Add fresh parsley on top and then close the jar. For a tasty and filling lunch on the go, shake the quinoa well before eating.
