Here’s my most-over-the-top recipe for @nwcherrygrowers #makeitcherry Rum Cake Donut Cherry Flambé Makes 20-24 donuts Prep time: 20 minutes Cook time: 20 minutes Ingredients: Rum Cake Donuts: 4 eggs ½ cup half & half ½ cup coconut oil ½ cup rum ½ cup shredded coconut 15.25 oz box yellow cake mix 3.4 oz box vanilla instant pudding Cherry Flambé: 1 lb cherries, halved and pitted ½ cup sugar 1 lemon, juiced and zested ½ cup rum Directions: 1. Preheat oven to 425°F. 2. For Rum Cake Donuts: Coat donut pans (four 6-donut pans or two 12-donut pans) with cooking oil spray. In a large bowl, beat eggs, half & half, coconut oil, and rum together until combined. Add shredded coconut, cake mix, and pudding mix and beat on medium speed until smooth. Spoon batter into donut pans about 2/3 full. Bake for 7-9 minutes until cake is golden brown and no cake sticks during toothpick test. Cool for 5 minutes in pan. Remove donuts and continue cooling on racks. 3. For Cherry Flambé: In a medium saucepan, mix cherries, sugar, lemon juice, and lemon zest together. On medium-low heat, cook cherry mixture covered for 5 minutes until sugar is dissolved. Raise heat to medium-high and cook cherry mixture uncovered for another 5 minutes until juice renders from cherries. Turn off heat and add rum when ready to serve. 4. To serve: Place 1-3 donuts on plate. Flambé cherry mixture to burn off alcohol in rum and ladle onto donuts.
