Product comparison Bacon @istrasmallgoods vs Bacon @bertocchismallgoods . . Istra bacon is good meat to fat ratio. Slightly thicker cut than Bertocchi. Slightly saltier and cooks quite gently. Slower cook and hard to burn but ends somewhat chewy on the bite . . My tried and trusted Bertocchi Gold hickory smoked has more fat on the strips but is thin and renders quite quick. Look out for the burn. But like the crispy, finish at the end. Salty with a subtle sweet, smoked note to it . . All in all, Istra is a good bacon. Meaty, generous and if you like it more salty then it’s a good buy . . For now, I’m sticking with Bertocchi . .
