This Watermelon and Manchego Salad is a great mix of sweet and savory tastes. The creamy Manchego cheese goes well with the juicy watermelon, and the fresh basil gives it a herbal touch. You can serve this colorful and refreshing salad as a side dish any time of the year or at a summer party.
Ingredients: 4 cups of cubed watermelon. 1 cup of thinly sliced Manchego cheese. 1/2 cup of fresh basil leaves. 1/4 cup of extra virgin olive oil. 2 tablespoons of balsamic vinegar. Salt and pepper to taste.
Instructions: Put the cubed watermelon and thinly sliced Manchego cheese in a large salad bowl. Cut the fresh basil leaves into little chunks and put them in the bowl. Add the extra virgin olive oil and balsamic vinegar to a different small bowl and mix them together using a whisk. This made the dressing. Pour the dressing over the salad and toss it gently to mix. Add salt and pepper to the salad as needed. Serve right away or put in the fridge to use later.

This warm and hearty salad combines tender braised baby artichokes with white beans, cherry tomatoes, and Manchego cheese for a delightful and satisfying dish. It's a perfect balance of flavors and textures, making it a great choice for lunch or a light dinner.
Ingredients: 1 pound baby artichokes. 2 tablespoons olive oil. 2 cloves garlic, minced. 1/2 cup white wine. 1 can 15 ounces white beans, drained and rinsed. 1/2 cup cherry tomatoes, halved. 1/4 cup fresh parsley, chopped. 1/4 cup Manchego cheese, shaved. Salt and pepper to taste.
Instructions: Cut off the tough outer leaves and the tops of the baby artichokes to get them ready. Cut them in half and put them right away in a bowl of lemon juice water to keep them from turning brown. Put the olive oil in a big pan and heat it over medium-low heat. Put in the minced garlic and cook for one minute, until the garlic smells good. Add the drained baby artichokes to the skillet and saut for another 2-3 minutes until they start to turn golden brown. Add the white wine and let it simmer for 5 to 7 minutes, or until the artichokes are soft and the wine is half gone. Add the cherry tomatoes and white beans, and stir them in. Cook for another two to three minutes, until everything is hot. Take the pan off the heat and add the chopped fresh parsley. Add pepper and salt to taste. Spread the warm salad out on plates and top with Manchego cheese that has been shaved. Warm Braised Baby Artichoke Salad with White Beans and Manchego is ready to be served right away.

Spain's most popular cheese, manchego is made from sheep's milk in the La Mancha region, just south of Madrid.
It has a firm and compact consistency and a buttery texture, often containing small, unevenly distributed air pockets. The colour of the cheese varies from white to ivory-yellow, and the inedible rind from yellow to brownish-beige.
This is not a cheese that melts well, so it's often served as tapas alongside bread, olives and Serrano ham or paired with a sweet quince paste known as membrillo.
