1/4 cup cream --> 3/4 cup = 188ml Jalna low fat 1.5 cup AP flour (375ml) --> 370ml (250 wholewheat, 120 plain) 3/4 cup mango puree = 187.5 --> 180ml 1/2 cup sugar = 100ml --> 75ml brown sugar 1 tsp vanilla 3/4 cup butter room temp --> 90ml = 6 tbsp oil (3 rice bran oil, 3 cocoil) eyeballed so prolly less lol 2 large eggs room temp 1/4 tsp soda 1/4 tsp powder
(measured in 180ml rice cup)
flour, soda, powder, tiny pinch salt
cream the oil, yoghurt, sugar.
egg, mix well. egg, mix well.
[preheat to 325F = 163C --> 170]
vanilla, mango puree. mix till creamy (4 min).
dry into wet, 1/3 at a time, fold in between.
11:04 start at about 12 i upped to temp to 180 cos it was still raw in middle WTFFF, and covered the top with a tent of foil because it was brown enough already finally at 12:28 just moist crumbs from the very middle and i took it out cos 1 raw slice > whole cake dry bloody 1 hr and 24 minutes ... = 84 min the recipe said 65-70. oh god. took it out and cooled it for 5 min then turned it out of the pan and impatient me sliced the end off and it was not even cooked F M L so i chucked it back in the pan,c covered top with foil, and put it back in the oven at 180 put in at 12:45 i think i made a mistake in the baking powder/soda lol, as i ended up LITERALLY just following my citron yoghurt recipe and replacing the citron tea with mango puree, BUT forgot to follow the powder/soda amount. so i ended up using just 1/2 a tsp of powder/soda when the citron recipe used 2 tsp fmlllllll (and i used a lot more greek yoghurt than they did cream, and more mango puree than citron, so a lot more liquid = i def needed more raising agent arrrghhh)
yea so it turned out so similar (argh deja vu) to that banana/yoghurt/oat flour fail I made ages ago that i like didn’t put any leavening agent in but that was back before I bought any baking things and had absolutely nothing at home. now i actually have stuff and still failed ARRRGHHHHH. waste of all that beautiful mango arrggh.

yeah it was basically semi-uncooked except for like 1cm around the outside. those bits taste O actually, the corners ol, but the rest is just thick and doughy and not nice.
would've been a better idea to follow my trusty amyshealthybaking banana bread and just sub in mangoes omg
flavourwise ... cant even tell it's mango flavoured. i think fresh mango would work a lot better, as the frozen mnog is comparatively quite sour and not very fragrant.
could add more sugar as well, to balance out the yoghurt and possibly bring out the mango idk.
