Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup chopped pecans. 1/2 cup maple syrup. 1/2 cup unsalted butter, melted. 1/2 cup milk. 2 eggs. 2 tsp baking powder. 1/2 tsp salt. 1/2 tsp vanilla extract.
Instructions: Preheat the oven to 350F 175C. In a mixing bowl, combine the flour, baking powder, and salt. In another bowl, whisk together the melted butter, maple syrup, milk, eggs, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped pecans. Spoon the muffin batter into greased or lined muffin cups, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
