Ingredients: 100g almond flour. 200g powdered sugar. 100g egg whites aged, at room temperature. 30g granulated sugar. Gel food coloring assorted colors. Buttercream or ganache for filling.
Instructions: Into a bowl, sift together powdered sugar and almond flour. Throw away any big lumps. Beat the egg whites in a different bowl until frothy. Add the granulated sugar gradually while beating the mixture until stiff peaks form. Once the egg white mixture reaches a thick, ribbon-like consistency, gently fold in the sifted dry ingredients macaronage. To use different colors of food coloring, divide the batter into different bowls. Add food coloring little by little until the desired marbling effect is achieved. Fill a piping bag fitted with a round tip with the colored batter. Pipe tiny rounds onto a parchment paper-lined baking sheet. Give each macaron some space. To remove air bubbles, tap the baking sheet firmly on the counter. Allow them to sit at room temperature for approximately half an hour to form a skin. Set the oven temperature to 300F 150C. The macarons should be baked for 15 to 18 minutes, or until they are risen and have a glossy, smooth top. Take them out of the oven and leave them on the baking sheet to cool completely. After the macarons have cooled, carefully remove them from the parchment paper. Match identical macaron shells and place them side by side with ganache or buttercream filling of your choosing. For optimal flavor, refrigerate the macarons in an airtight container for a full day prior to serving. Savor your French macarons with marbles!
