Marshmallow Cookie Cups
In late November, I'd gotten home from a friend's party one Saturday night, and though I was going to be waking up early for a weekly long run with my running group, I decided to make some cookies.
I had a lot of marshmallows, but no graham cracker crumbs to make something "s'mores"-like, so I decided to use my go-to chocolate chip cookie recipe (one I got from a classmate in 1994[!!]) as a base. I pressed the dough in mini muffin tins, with about 4-5 chocolate chips in each. When they were almost done, I popped half a large marshmallow on each, and put them under the broiler to brown.
I brought them to my running group on Sunday morning, and they were a big hit!
Ingredients (more or less):
1/2 cup softened butter
1/2 cup brown sugar
1/4 cup white sugar
1 tsp vanilla
1 egg
1 cup flour
1/2 baking soda
chocolate chips - about 1/4 cup? (4-5 in each)
12 large marshmallows, cut in half
