This Vegan Mallomar Cake is a delightful combination of fluffy cake, gooey marshmallows, and rich chocolate, reminiscent of the classic Mallomar cookie. It's perfect for indulging your sweet tooth while staying true to your vegan lifestyle.
Ingredients: 1 cups all-purpose flour. 1 cup sugar. 1/3 cup cocoa powder. 1 teaspoon baking soda. teaspoon salt. 1 cup non-dairy milk such as almond or soy milk. 1/3 cup vegetable oil. 1 tablespoon apple cider vinegar. 1 teaspoon vanilla extract. 1 cup vegan marshmallows. 1 cup vegan chocolate chips. 1 tablespoon coconut oil.
Instructions: Preheat oven to 350F 175C. Grease and flour a 9-inch round cake pan. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt. Add non-dairy milk, vegetable oil, apple cider vinegar, and vanilla extract to the dry ingredients. Mix until well combined. Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Remove the cake from the oven and let it cool completely. Once the cake is cool, top it with a layer of vegan marshmallows. In a microwave-safe bowl, melt the vegan chocolate chips and coconut oil together in 30-second intervals, stirring in between until smooth. Pour the melted chocolate over the marshmallow layer, spreading it evenly. Place the cake in the refrigerator for about 30 minutes to allow the chocolate to set. Slice and serve the vegan Mallomar cake, and enjoy!
