Parsnip purée - the very best side to any meat :)
3 parsnips 1 can of bpa free, additive free full fat coconut milk Salt, pepper
Peel and slice the parsnips. Put them in a pot with the coconut milk and some water and start cooking them.
Boil and boil and boil nice and slowly until all the water evaporates, and the parsnips get soft. It could be as long as 20 minutes.
Pour the whole thing into a blender or food processor and blend until smooth.
Add salt and pepper.
