Ingredients: 1 1/2 cups all-purpose flour. 2 tablespoons matcha green tea powder. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1/2 cup sour cream. 1/4 cup milk. 2 tablespoons lemon juice. 1 tablespoon lemon zest. 1 teaspoon vanilla extract.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a bowl, sift together the flour, matcha powder, baking powder, baking soda, and salt. Set aside. In another bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the sour cream, milk, lemon juice, lemon zest, and vanilla extract. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
