Crab season has arrived! Snow crabs are a great crab to eat and interesting enough they have different names depending on the area they are brought onshore and to confuse us even more female and male snow crabs have different names, The male crab can be sold under the names of Matsuba gani (caught in Shimane, Totori and Kyoto), Echizen gani (from the waters of Fukui) , kano gani (Ishikawa Pref.) and Daiza kani (Kyoto). What you see here is the female snow crab being sold in Ishikawa prefecture called kohbako gani (香箱ガニ). Its smaller than a male's and its body is about the size of a man palm.
