I believe bites just cause the infection to spread a bit quicker. For example, if I am already in the final stage of virus A and you paid to get virus A from Gunner(I think that's his name? The zombie guy) I could bite you a bunch and cause the infection to spread quicker but the infection will spread on its own, just at a slightly slower pace. This is just for the initial stage though.
