My favorite meal is Bibimbap!
Bibimbap is a Korean meal that literally means "mixed rice." It's traditionally lots of prepared vegetables (some raw, some cooked, always tossed with garlic and sesame seeds/oil,) a bit of rice, some protein, and a fried egg topped with 'gochujang' or a spicy red pepper paste (if you have Celiac, make sure to get the one that is made with rice.)
I tend to prepare the vegetables on the weekends, and cook a big batch of rice and then for meals, I'll assemble it rather easily. If it's what I call a "lunch portion," I'll use a half cup of brown rice, half cup of each of the veggies, one tablespoon of gochujang, and one fried egg. That will keep me full and happy for many hours and on long days, it's great. If I'm having it for dinner, I generally have a cup of brown rice, half cup of each of the veggies, one tablespoon of gochujang and two fried eggs because I need more protein. Sometimes I'll put in leftover shrimp or salmon from a previous night's dinner and only put in one egg. I just need more protein and am trying to find ways to incorporate it.
If you'd like to try making bibimbap yourself, just google it for a recipe that sounds good to you! You can edit the types of vegetables to ones you enjoy. I generally have beansprouts, carrots, zucchini, cucumber and spinach. When I run out of one veggie, I sometimes throw in some fresh greens for more bulk.
