This is how dinner often goes in my house. It’s 8 o’clock, I have my favorite sprouted brown rice cooked in the refrigerator, chopped kale, the last scrap of garbanzo beans, and some lemon garlic vinaigrette I made a few weeks ago. Then I had a random scrap of Romain lettuce that would not fit in the container in the refrigerator so that got torn and tossed on the side of the dish. No relation to the ‘creation’ at hand, but needs to be eaten. Then because this makeshift tabouli needed a little brightness I squeezed a little extra lemon and chopped up a little bit of apple into it. Look at your scraps and see what you can rustle up for dinner.
