Welsh Rarebit with salad

350g Mature Cheddar, grated

1 large egg, lightly beaten

2 tbsp beer (preferably stout) or milk

1 tsp Worcestershire sauce

1 tsp English mustard

pinch cayenne pepper

1/2 thick slices white bread, preferably from a bloomer loaf

salad:

cherry tomatoes leftover lettuce and grated carrot

Lamb Kofte tortilla

150g lamb mince

1 clove garlic, crushed

2tsp ground cumin

A few cherry tomatoes, quartered

¼ red onion, sliced

2 Carrots grated 

1 Little Gem lettuce, torn

3tbsp reduced-fat crème fraîche/ natural yogurt (which i prefer cause with honey is yunno yogurt)

mini tortillas or pitta bread is cheaper

Mix the lamb with the garlic, cumin and some black pepper. Take 4 skewers and, using your fingers, squash the meat around them to make 4 kebabs. Sprinkle each with a splash of oil, then griddle or pan-fry for 10 mins, over a medium to high heat, turning occasionally.

For the salad, mix the tomatoes, onion, carrot and lettuce together with the remaining oil.

To serve, top each tortilla with salad and 2 kebabs and drizzle over the crème fraîche
