This quick and easy vegetable donburi is a great option for a meat-free main. It's a flavorful stir-fry of colorful vegetables served over a bed of steamed rice, with a savory soy sauce-based sauce.
Ingredients: 2 cups of cooked rice. 1 cup of mixed vegetables carrots, bell peppers, broccoli, snap peas. 1/2 cup of sliced mushrooms. 1/4 cup of sliced onions. 2 cloves of garlic, minced. 2 tablespoons of vegetable oil. 3 tablespoons of soy sauce. 1 tablespoon of rice vinegar. 1 tablespoon of sugar. 1/2 teaspoon of ginger paste. Salt and pepper to taste. Sesame seeds and sliced green onions for garnish.
Instructions: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and sliced onions, and saut for 2-3 minutes until they become fragrant and slightly browned. Add the sliced mushrooms and continue to saut for another 2-3 minutes until they start to soften. Now, add the mixed vegetables and ginger paste. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp. In a small bowl, whisk together the soy sauce, rice vinegar, sugar, salt, and pepper. Pour the sauce mixture over the vegetables in the skillet and stir to coat everything evenly. Cook for an additional 2 minutes. To serve, place a portion of cooked rice in a bowl or on a plate.
