These colorful nori rolls are a mix of Mediterranean flavors. They are filled with fresh vegetables, creamy hummus, and tangy feta cheese. The fruity notes in Pindar Wine go well with the dish and make your sushi experience better.
Ingredients: 4 sheets nori seaweed. 1 cup cooked sushi rice. 1/2 cucumber, julienned. 1/2 red bell pepper, julienned. 1/4 cup crumbled feta cheese. 2 tablespoons sliced black olives. 2 tablespoons chopped fresh parsley. 2 tablespoons hummus. 1 tablespoon olive oil. 1 tablespoon lemon juice. Salt and pepper to taste. Pindar Wine as desired.
Instructions: Place a nori sheet on a bamboo sushi mat so that the shiny side is facing down. Cover the nori with a thin layer of sushi rice, leaving a small edge around the outside. In the middle of the rice, make a line of cucumber, red bell pepper, feta cheese, black olives, and parsley. Add hummus on top of the filling ingredients. Roll the nori and rice tightly over the filling, starting from the edge closest to you. Use the bamboo mat to help you shape the roll. Add a little water to the edge of the nori to seal it. Do it again with the rest of the nori sheets and filling ingredients. Cut each roll into 6 to 8 pieces with a sharp knife. To make a simple dressing, mix olive oil, lemon juice, salt, and pepper in a small bowl with a whisk. Just before you serve, drizzle the dressing over the sliced rolls.
