This vegan stew is full of vegetables, lentils, and barley, and it tastes great. It's perfect for a hearty meal on a cold day.
Ingredients: 6 cups vegetable broth. 1 large onion, chopped. 4 cloves garlic, minced. 4 large carrots, sliced. 4 celery stalks, sliced. 4 potatoes, cubed. 1 cup green peas. 1 cup corn kernels. 1 cup cooked lentils. 1 cup cooked barley. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. 1 teaspoon smoked paprika. Salt and pepper to taste.
Instructions: In a large pot, saut onion and garlic in a splash of vegetable broth until translucent. Add carrots, celery, and potatoes, and cook for another 5 minutes. Pour in the remaining vegetable broth and bring to a simmer. Stir in green peas, corn, lentils, barley, thyme, rosemary, and smoked paprika. Season with salt and pepper to taste. Cover and let simmer for 30-40 minutes, or until vegetables are tender. Serve hot and enjoy!
