Ingredients: 2 cups pitted Medjool dates. 1 cup pumpkin puree. 1/2 cup coconut oil, melted. 1/2 cup almond butter. 1/4 cup maple syrup. 1 tsp vanilla extract. 1 tsp ground cinnamon. 1/2 tsp ground nutmeg. 1/4 tsp ground ginger. Pinch of salt. 1/2 cup chopped walnuts or pecans optional.
Instructions: In a food processor, blend the dates until they form a paste-like consistency. Add pumpkin puree, melted coconut oil, almond butter, maple syrup, vanilla extract, cinnamon, nutmeg, ginger, and salt to the food processor. Blend until well combined and smooth. If using, fold in chopped nuts. Line a baking dish with parchment paper, then pour the mixture into the dish. Smooth the top with a spatula. Place in the refrigerator to set for at least 4 hours or until firm. Once set, cut into squares and serve. Enjoy!
