Cranberry Orange Meltaway Cookies are delicate and buttery, and they simply melt in your mouth. These cookies are a delightful treat for any occasion, thanks to the perfect combination of tangy cranberries and zesty orange flavors.
Ingredients: 1 cup butter, softened. 1/2 cup powdered sugar. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1/2 cup dried cranberries, finely chopped. 1 tablespoon orange zest. 1/2 cup cornstarch. Pinch of salt.
Instructions: In a bowl, cream together butter and powdered sugar until light and fluffy. Add vanilla extract and mix until combined. Gradually add all-purpose flour, cornstarch, and salt. Mix until just combined. Fold in chopped dried cranberries and orange zest. Divide the dough in half and shape each half into a log about 1.5 inches in diameter. Wrap the logs in plastic wrap and refrigerate for at least 2 hours. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Slice the chilled logs into 1/4-inch rounds and place them on the prepared baking sheet. Bake for 12-15 minutes, or until the edges are lightly golden. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
