Ingredients: 2 large portabella mushrooms, cleaned and sliced. 2 tablespoons olive oil. Salt and pepper to taste. 4 slices of your favorite bread. 4 tablespoons butter, softened. 1 cup shredded mozzarella cheese. 1/2 cup grated Parmesan cheese. 1/4 cup fresh basil leaves, chopped.
Instructions: Preheat your oven to 400F 200C. Place the sliced portabella mushrooms on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the preheated oven for about 15-20 minutes, or until they are tender and slightly caramelized. While the mushrooms are roasting, spread softened butter on one side of each bread slice. In a skillet over medium heat, place two slices of bread with the buttered side down. On top of each bread slice, add a layer of mozzarella cheese, followed by the roasted portabella mushrooms, grated Parmesan cheese, and fresh basil leaves. Place the remaining two slices of bread on top with the buttered side facing up.
