Of course to an extent all trolls are cannibals given the whole grubsauce thing. I'm using the word to refer to trolls of mine who specifically eat any troll that has grown out of the 'grub' stage. I’m excluding trolls of mine who are simple rainbowdrinkers and trolls who exclusively feed on blood.
Active cannibals on my blog and I guess a little about them/why they are the way they are:
A product of a harsh environment and his lusus' teachings when he was growing up. He still very much will eat trolls alive on occasion but lately he takes to a more civilized approach, eating cooked troll meat provided by restaurants or even his moirail. He can eat other food, however he still vastly prefers trolls. It's an addiction at this point for him, and when he's agitated eating troll meat is calming to him.
Meruma's only goal is survival so if he's hungry or someone he's friends with is hungry he will grab a troll to eat. He can eat a troll alive, or cook it, either is fine. He's not addicted to eating troll meat though. As long as other options are around, trolls are safe.
Due to his physiology he simply cannot eat anything other than trolls, some natural minerals and plants. He will eat trolls alive, bite by bite chunk by chunk, or he will eat them served to him sashimi style on a platter by his followers. He will eat brains as well as he won't be affected by it or succumb to anything like kuru.
He's a rainbowdrinker, but he loves the texture and taste of eating trolls. Chopping them up and eating them as he goes along is a wonderful experience for him. He'll even drain a troll of their blood and use it as a sort of sauce to coat or dip the meat slices with. There's no end to the ways he'll eat a troll; he's always trying something new to experience.

Firmly believes that in eating trolls, he is purifying their flesh. He doesn’t make a point to hunt trolls to eat, but rather any enemies that die under his conversion practices, or any cult members that die are subject to possibly being eaten by him.
Does it because he wants to, but also will say that it’s due to the same reasons as Rokuro - that he’s purifying flesh by eating it.
Hedonistic, willing to partake in troll flesh if it’s prepared well and tastes good. Under his rule of the kingdoms in the abyss, it’s generally believed that cannibalism of outsiders is normal and a delicacy.
Originates from one of the kingdoms under Ymir’s rule. She’s carried this practice over even though she’s left the kingdom and is part of a new Order, and has adopted the belief that it is natural for lesser forms to provide sustenance to the divine.

All hail from one of Ymir’s kingdoms. They see it as normal and common as a choice to eat chicken or beef, and don’t think anything of it.
Hails from one of the abyssal kingdoms. He is a huge foodie and will eat anything if it looks and tastes good, so he doesn’t think twice about cannibalism.
