*Methi aloo* Recipe: Ingredients - 1kg fenugreek (remove the leaves and chop them), 2 medium sized potato (cut in small cubes), 1 medium sized tomato (chopped), oil (i used mustard oil), pinch of asafeotida, 1 tbsp cumin seeds, 4 cloves of garlic (mashed), 1" ginger (mashed), 1/2 tbsp coriander powder, 1/4 tbsp red chilli powder, 1/2 tbsp sabzi Masala, 1/4 tsp turmeric powder (optional), salt to taste. Method: 1. In a kadhai heat some oil. After it is hot add heeng and then cumin seeds to crackle. 2. Then add mashed ginger-garlic and let it leave it's raw aroma. Now add cut potatoes to it and let it cook for 2 minutes. 3. Later add chopped tomato and let it cook so that these get little mashed. Then add dry spices like coriander powder, red chilli powder, sabzi Masala, salt and mix it all well. 4. Now add chopped fenugreek leaves and blend it well. Cook this on slow flame till the water gets dry. Serve it with parantha or chapati.
